
The seafood festival was the concept that I brought here to the Maldives for the festive season just passed.
So I thought I’d give you a delicious recipe for baked seafood rice.
Baked rice with seafood
The seafood rice is prepared by separately cooking clams and mussels and peeled shrimps while the rice is cooked in the oven, adding the molluscs only at the end. Here are the steps for the baked seafood rice.
Preparation

Wash the mussels well and remove the fine linen for each of them by simply pulling it with your hands. Then put the clams in salt water so that they can lose the sand.
Seafood baked rice
Open the shellfish in a pan with a tablespoon of oil and a clove of garlic. In the meantime, peel the prawns and sauté them in a separate pan with oil , pepper and salt .Do the same with the calamari rings .
Baked seafood rice
In a saucepan, fry the finely chopped onion in the remaining oil. Pour in the rice and toast it, add the tomatoes and sprinkle with all the boiling vegetable broth and the cooking water of the shellfish ( mussels and clams) .
Mix well, cover the saucepan with a sheet of waxed paper and cook the rice in the oven at 200 ° C for about 18 minutes. Meanwhile, shelled mussels and clams.
Garnish on the surface with the remaining seafood and sprigs of parsley.
As soon as it is ready, mix the molluscs , shrimps and the calamari with the rice.
Baked seafood rice is ready
Tip: For a more captivating look and a particular taste, you can a few the saffron pistils with half a glass of water in the last two minutes of cooking the rice.

Ingredients for 4 people:
- Basmati rice 240 g
- Mussels 300g
- Clams 200 g
- Prawns 200 g
- Calamari 200g
- Vegetable broth 4 dl
- 1⁄2 red onion
- 1 clove garlic
- Parsley to taste
- Olive oil 3 tbsp
- Salt to taste
- Pepper as needed
- Tomatoes 300g
