The purpose of this portfolio
Proof of work, not a catalogue of promises.
Cristian Marino’s career combines senior operational leadership with defined assignments carried out directly for ownership.
His career includes Executive Chef appointments with international hospitality brands including Radisson Blu, InterContinental and Marriott International, complex hotel pre-openings in Indonesia and resort operations in the Maldives. Other assignments have been carried out directly for ownership, covering restaurant development, hotel and resort reopening, leadership selection, culinary pre-opening work and operational transition within significant project budgets.
The distinction matters. Concepts and plans only prove their value when kitchens, people, standards, budgets and guest expectations have to work together in live service.
The cases below show how that experience was applied to specific operational responsibilities.
Executive leadership, restaurant development and leadership transition
Meeru Maldives Island Resort

Operating environment
Active resort during major expansion
Mandate
Restaurant development and leadership transition
Outcome
Three restaurants opened, with permanent culinary leadership in place.
After nearly two years leading Meeru’s culinary operation as Executive Chef, Cristian later returned with a defined ownership-led mandate.
The assignment covered the development and opening of three restaurant concepts, support during a major operational expansion and preparation for the next Executive Chef.
The work connected concept definition, menus, kitchen practicality, staffing, standards and leadership transition inside an active resort.
Three distinct restaurant identities
A-Mare
A focused Italian restaurant with a clear and recognisable culinary identity.
Vilu
A Mediterranean concept offering a broader regional perspective within the resort.
The Reef
A seafood restaurant centred on local fish, seafood and its island environment.
Each concept needed to be distinct for guests while remaining practical within the same island infrastructure, team and supply environment.
Connecting concept, guest value and commercial performance
Menu development included signature dishes capable of reinforcing each restaurant’s identity and supporting revenue.
At The Reef, the Seafood Tower became a signature presentation designed to create guest value, strengthen the restaurant’s positioning and generate additional revenue.
Preparing the next Executive Chef
Ownership also needed an Executive Chef capable of inheriting a larger and more complex culinary operation.
Cristian supported the search, final interviews and assessment of candidates, focusing on leadership maturity, operational judgment, communication and suitability for the property.
Once appointed, the new Executive Chef was introduced to the direction, concepts and standards before taking full responsibility.
The assignment concluded with three operational restaurants, a stronger culinary structure and permanent leadership in place.
Selected contribution
- Development and opening of three new restaurant concepts
- Italian culinary positioning for A-Mare
- Mediterranean concept development for Vilu
- Local fish and seafood positioning for The Reef

Resort pre-opening, culinary development and operational handover
Veligandu Maldives Resort Island

Operating environment
Resort reopening
Mandate
Culinary readiness and leadership handover
Outcome
Kitchens operating, full brigade established and Executive Chef in control
Veligandu was a culinary pre-opening assignment for the reopening of the resort, carried out on behalf of ownership.
The mandate was to move the culinary operation from plans and construction into live service, establish the brigade and leadership, support opening and hand over a stable operation.
Preparing the kitchens for operation
Kitchen layouts, equipment, workflow and production areas were reviewed against the concepts, expected volumes and practical needs of live service.
Building the culinary team
Recruitment covered the full brigade, from Commis Chefs through senior positions and the Executive Chef.
Assessment considered technical ability, leadership, communication, culture and readiness for a new resort.
Selecting the Executive Chef was critical because the appointed leader would take full responsibility after handover.
Supporting the Executive Chef through opening
After appointment, Cristian worked alongside the Executive Chef during opening as an experienced reference for ownership and the culinary leadership team.
Responsibility transferred progressively as kitchens, people and standards moved into live operation.
Problems could therefore be identified, discussed and corrected before they became part of the normal operation.
Knowing when the assignment was complete
A successful pre-opening assignment should eventually make the external advisor unnecessary.
The assignment concluded when kitchens were functioning, the brigade was established, the Executive Chef was in control and the operation had reached a stable rhythm.
Selected contribution
- Culinary pre-opening support on behalf of ownership
- Final review of kitchen layouts and operational flow
- Kitchen equipment and OS&E review
- Restaurant and culinary concept development
- Menu creation and culinary direction
- Recruitment of the complete culinary brigade
- Candidate interviews across different kitchen levels
- Executive Chef assessment and selection support
- Preparation and onboarding of the culinary leadership team
- Standards, procedures and operational readiness
- Support to the Executive Chef during opening
- Operational troubleshooting during the transition into live service
- Handover once the culinary operation became stable and independent
Wider operational foundation
Experience across brands, countries and operating models.
His international experience began early in Spain, where he managed two Italian restaurants at the Diamante Beach Hotel in Calpe, before working aboard a Silversea luxury cruise ship on itineraries from Russia to Hong Kong. The roles below show how that foundation developed into senior hotel and resort leadership.
Radisson Blu · Europe
From restaurant leadership to Executive Chef responsibility
During approximately five years with Radisson Blu, Cristian progressed from Italian Chef de Cuisine to Executive Sous Chef in Bucharest. In that role, he positioned the hotel’s Italian restaurant as an authentic Italian dining destination appreciated by local diners and international hotel guests. Whenever the Executive Chef was away, he assumed responsibility for the hotel’s full culinary operation. During the operational integration of the two properties, which together comprised approximately 700 rooms and apartments, he was assigned to open the new Park Inn restaurant and implement Rezidor standards. During the same period, he took part in training and workshops at Radisson hotels across Europe, covering food waste management, the Experience Meetings concept and specialist development for Italian restaurant concepts. Executive Chef assignments followed in Sofia after a major renovation and in Split. In Split, his mandate centred on change: repositioning the hotel’s restaurants and banqueting offer ahead of the summer season and introducing new approaches across conference catering and large scale events.
InterContinental · Bucharest
A broader level of culinary leadership
As Executive Chef at InterContinental Bucharest, he assumed responsibility for the overall culinary operation, including three hotel outlets and the banquet kitchen. The role expanded across social events, outside catering, team administration, supplier management, menu development and the progressive elevation of the hotel’s culinary offer.

Marriott International · Indonesia
Two connected hotel pre openings in East Java
As Complex Executive Chef for two Marriott International pre opening properties in Surabaya, Cristian worked across the development of The Westin Surabaya and Four Points by Sheraton Surabaya, Pakuwon Indah. The complex included ballroom and convention operations designed for approximately 4,000 guests, requiring coordination across large teams, significant event volumes and two connected hotel operations.
The Maldives · Since 2021
From operational leadership to ownership led assignments
At Meeru, Cristian served for nearly two years as Executive Chef before returning in an advisory capacity to develop three restaurant concepts and support a leadership transition. At Veligandu, his work covered culinary pre opening, recruitment of the full brigade, senior chef assessment, menu development, training, opening support and operational handover.
Together, these experiences form the operational foundation of Cristian Marino Advisory: independent judgment built across high volume banqueting, multi outlet hotels, pre openings, resort operations, leadership selection and projects conducted directly with ownership.

Experience applied to decisions
Past work matters because it explains where professional judgment comes from.
Experience gained while opening restaurants, selecting Executive Chefs, assembling brigades, supporting ownership and handing operations over to permanent leadership creates a different perspective from experience based only on observation.
It is part of the professional foundation behind Second Opinion, Executive Chef Assessment and Cristian Marino Review within Cristian Marino Advisory.
The purpose is not to replace the people already responsible for an operation. It is to provide experienced judgment at moments when an important decision, leadership appointment or existing concept deserves another perspective.
Project descriptions reflect Cristian Marino’s own professional contribution and do not imply sole responsibility for every aspect of the wider resort, architectural or corporate development.
