When I first set foot on Veligandu Island in March 2024, I was struck by its unspoiled beauty—a turquoise lagoon that seemed to stretch into infinity, white sand so soft it felt like stepping into a dream, and the gentle rhythm of the waves lulling you into serenity. It wasn’t just a resort; it was a canvas waiting to be painted with flavors and culinary experiences that would mirror the island’s magic.

I knew from the start that this collaboration wasn’t just about food—it was about crafting memories, connecting people to the land and sea through every dish, and creating something extraordinary that would linger long after the guests left. This vision was shared in my interview with Hotelier Maldives, where I discussed the transformation of Veligandu’s culinary landscape and the journey behind it.

Dhonveli Buffet Restaurant: Reviving a Beloved Tradition

At the heart of Veligandu’s dining heritage lies Dhonveli, a buffet restaurant with a reputation for delivering consistent, comforting flavors for over 40 years. Since its opening in 1984, it has welcomed generations of guests, offering a dining experience that blends tradition with modern innovation. While its legacy was undeniable, the goal was to breathe new life into its offerings while preserving its soul.

Each evening, guests were invited to journey across the globe through Themed Culinary Nights. Whether savoring the vibrant spices of Maldivian curries, the rich flavors of an authentic Italian dinner, or the delicate artistry of sushi, every detail was crafted to transport them to another corner of the world.

One highlight was Sabato Italiano, an evening dedicated to the essence of Italian cuisine, offering guests a taste of authentic flavors prepared with care and tradition.

I can still picture the joy on a guest’s face as they watched their naan puff to perfection in our new tandoor oven or the quiet hum of conversations as couples sampled fresh juices and superfood bowls from the healthy breakfast corner, set against the backdrop of a rising sun. Dhonveli became more than a restaurant; it became an experience of discovery and comfort.

Raalhu Restaurant: A Love Letter to Fine Dining and the Ocean

For those seeking an elevated dining experience, Raalhu became a sanctuary of indulgence. Set against the dramatic backdrop of the Maldivian sunset, this evening-only restaurant offered a menu that showcased both the ocean’s bounty and the artistry of fine dining.

Signature dishes included Smoked Beef Tartare, Maldivian Lobster and Crab Bisque, Grilled Lobster, Revised Lobster Thermidor, and the extravagant Seafood Tower. Guests also enjoyed the Surf & Turf, a refined combination of grass-fed Angus beef tenderloin and jumbo tiger prawns, served with Béarnaise sauce, roasted vegetables, and green asparagus tips.

Every detail, from the plating to the ambiance, was designed to make guests feel like they were part of something extraordinary—a dining experience that felt intimate yet unforgettable.

Champagne Pavilion: An Exclusive Sunset Escape

Adjacent to Raalhu, the Champagne Pavilion offered a one-of-a-kind experience for those seeking the perfect blend of luxury and relaxation. Overlooking the vast expanse of the Indian Ocean, this intimate setting allowed guests to indulge in a selection of premium champagnes paired with delicate gourmet bites.

Whether savoring fresh oysters, artisanal canapés, or a glass of perfectly chilled bubbly, the Champagne Pavilion provided an idyllic backdrop for special celebrations, romantic evenings, or simply unwinding as the sun dipped below the horizon. This exclusive venue complemented the refined elegance of Raalhu, elevating the overall dining experience at Veligandu to new heights.

MADIVARU Silk Restaurant & Teppanyaki Grill: Where Cultures Meet

MADIVARU Silk Restaurant was born from a dream to celebrate the journey of the Silk Road—a path that connected cuisines, cultures, and stories. Nestled at the southern tip of the island with sweeping sunset views, this concept became a culinary bridge between the Mediterranean and Asia.

The dishes reflected this fusion, blending bold flavors and delicate techniques. From flavorful seafood and perfectly grilled meats to a fragrant Thai green curry, we also paid tribute to a reimagined local dish—our signature Tuna Steak, expertly prepared to highlight the essence of Maldivian flavors.

And then there was the Teppanyaki Grill—an intimate counter for just ten guests where the clinking of knives and the sizzle of fresh ingredients became the night’s entertainment. I watched as chefs performed with theatrical flair, engaging diners in a dance of flavor and precision. The laughter, the claps, the sheer joy of those evenings will remain etched in my memory.

Casual Elegance: The Poolside Snack Bar

Not every meal has to be a grand affair, and so we turned our attention to the Snack Bar, offering a playful yet thoughtful menu for casual poolside dining.

From wraps bursting with vibrant ingredients to vegetarian and fish burgers, we ensured every bite felt nourishing yet indulgent. Among the highlights were the Classic Burger, a timeless favorite that delivered a perfectly balanced combination of flavors, Pane Cunzato, a traditional dish that brought the rustic charm of Mediterranean cuisine to the Maldives, and Gambas a la Ajillo, a Spanish-inspired delight featuring succulent shrimp sautéed in garlic-infused olive oil, adding a touch of boldness to the menu.

The desserts were where we let creativity shine—Mango Sticky Rice and Banoffee Pie became instant favorites, offering a sweet conclusion to a day spent under the Maldivian sun.

Bespoke Private Dining Experiences

For those looking for a truly exclusive culinary journey, Veligandu also offered private destination dining experiences. Whether it was an intimate beach dinner under the stars, a romantic setup at the Yoga Pavilion, or a luxurious gourmet experience aboard a private yacht, each event was meticulously crafted to create unforgettable memories.

As my collaboration with Veligandu comes to an end in February 2025, I look back with immense pride on what has been created. This journey was more than designing menus and refining techniques—it was about building a legacy that the dedicated culinary team will continue to uphold and evolve.
