Ferragosto is coming soon a day of celebrating summer with friends and family. I give you as present my personal recipe of Calamari Ripieni ( stuffed calamari )
4 Calamari | 40 g of minced bread crumbs (from old bread) | 1 egg | 60 gr of Grated parmesan cheese | 100 gr of ricotta cheese | 20gr of fresh parsley | 1 lemon zest | extra virgin olive oil | black pepper | salt

Method of cooking and preparation

Chop the tentacles and cook them gently in a pan with 2 tablespoons of oil, a pinch of salt, a little crushed black pepper and a clove of garlic for 5-6  minutes .Free the pan and in the same toast the crumb over high heat with a drizzle of oil. Turn off and mix it with the tentacles, egg, a tablespoon of parmesan and chopped parsley,  ricotta cheese and the lemon zest .Using a spoon, fill the squid sacks only halfway (they will shrink during cooking).
Close the bags by stopping them with a toothpick. Briskly brown the stuffed squid in a pan with 2 tablespoons of oil for 1-2 minutes , wet them with a glass of vegetables stock or white wine ( also simple water is fine ) , reduce the heat, cover with the lid and cook for about another 10-15 minutes Serving suggestions grilled lemon , baked vegetables and fresh oregano leaves . Buon appetito
