Here’s an excellent tip for a healthier and delicious at-home alternative to the classic Eggplant Parmigiana. Try making a two-time baked eggplant and zucchini Parmigiana that’s not fried!
The best part is that it’s super easy to prepare.
All you need is:
1 zucchini, 1 eggplant, dry oregano, 1 mozzarella, tomato sauce, extra virgin olive oil, cherry tomatoes ,salt ,black pepper, and Parmesan cheese.
Bake the eggplant and zucchini in the oven at 180° for 15 minutes, then follow the steps per the video. Once it’s ready, bake it again for 15 minutes at 150°. It’s that simple!
