I’m not a vegetarian, but I appreciate the vegetarian options!
They are prepared with: baked aubergines, extra virgin olive oil, and aromatic herbs!
My secret?
There he is :
Cut the aubergines in half lengthwise “plant aromatic herbs” in one of the two halves,
cover it with the other half, then bake at 220 ° for about 20 minutes (depending on the size of the aubergines)
Remove the black skin and chop everything.
Season with salt and pepper, add a little lemon zest and extra virgin olive oil, and mix.

You can, of course, add garlic, aromatic herbs, or other favorite spices and seasonings!
