“ Eggplant Caviar”

Some call it “Eggplant Caviar” .

I’m not a vegetarian but I really appreciate the vegetarian options!

Prepared with: baked aubergines, extra virgin olive oil and aromatic herbs!

My secret?
There he is :
Cut the aubergines in half lengthwise “plant aromatic herbs” in one of the two halves,
cover it with the other half then bake at 220 ° for about 20 minutes (depending on the size of the aubergines)

Remove the black skin and chop everything.

Season with salt and pepper and add a little lemon zest and extra virgin olive oil.

That’s it 😉

You can of course add garlic , aromatic herbs or other favorite spices and seasonings!
