Dear friends, this update is for those who have been following my blog for a long time. I have been in the Maldives since September 2021 and plan to stay here for a while. I have always wanted to explore the Maldives islands, so I am delighted to be on an atoll not far from Male. This Maldivian island is much larger than the other islands of the Maldives.
The resort I work for is one of the largest and longest-running in the Maldives islands. My goal here on this private Maldivian island (hosting only our clients and staff) is to contribute to their success while gaining a new personal life experience.
For the uninitiated, the Maldives is a Muslim country, so my healthy lifestyle includes a diet rich in fruit, vegetables, and fish, and abstaining from alcohol, as I describe in my book “The Recipes of my Smile,” fits perfectly into the Maldivian culture.

I created this blog to keep you updated on my travels and to share some easy recipes to make at home.
I am 40 years old, and I was born in Milan in February 1982,
I moved to Calabria very young and soon started learning to cook in my parents’ restaurant.
At 17, I left the South and returned to the North, where I studied at the prestigious “Erminio Maggia” Hotel School in Stresa on the shores of “Lake Maggiore.”
I spent the evenings working in hotels and restaurants in the area, sometimes as a cook and others as a waiter.
Before leaving Italy to explore the world, I ensured I had acquired enough of what Italy has to offer by working in different regions of the “Bel Paese.”
From the sea to the mountains, South to North, passing through central Italy, including Abruzzo, Calabria, Piedmont, Valle d’Aosta, and Lombardy, Which means assimilating the different traditions and cultures and knowing other ingredients and techniques.
From an established Executive Chef of a 5-star Hotel to a Culinary Consultant:
This passion has led me to travel and work in Italy, Europe, the Middle East, and Asia, where I have gained vast culinary and life experiences.
My resume includes travel experiences in over 10 countries.
I have obtained and maintained ‘The Golden Q’ from “Ospitalità Italiana” for most of the Italian restaurants he has worked for.
I also received the “Silver Plate,” which I got after a themed dinner organized with the Italian Academy of Cuisine representative in one of the hotel’s restaurants.
I have experience in Italy, France, the UK, Spain, Croatia, Romania, Bulgaria, Indonesia, and Dubai.
I traveled and was inspired by the more than 30 countries I visited while working for Silversea, an award-winning 6-star cruise ship.
I have affirmed my career as an Executive Chef in Europe, working for Radisson Blu and InterContinental.
From 2019 to 2020, I worked as Complex Executive Chef for two pre-opening Marriott Hotels & Resorts in East Java-Indonesia.
Now I continue traveling the world, sometimes as a Consultant Chef and others as an executive chef, to write books and, above all, to tell my experiences through this blog.
The “Recipes” of my Smile is my first book and is available in 4 languages: English, Italian, Spanish and Portuguese.
