
This year Friday 13 May is a lucky day because we celebrate the world day of one of my favorite dishes, Hummus.
As mentioned in my book during the time I lived in Dubai, hummus was my daily food at that time and I still love hummus here in the Maldives.
Today for the international hummus day ,we have created 3 different versions in the resort where I work here in the Maldives.
Classic Hummus

Hummus Day is celebrated every year on May 13th

Classic Hummus
The main ingredients are:
Boiled chickpeas 400g
Tahini 2 tablespoons
Extra virgin olive oil 2 tablespoons
Salt 2g
Lemon juice 1 teaspoons
1 fresh garlic cloves, peeled and crushed ( optional)
Directions :
- Drain and rinse the cooked chickpeas, then transfer them to a blender. Pour in the lemon juice, the tahini and the oil .
- Add the salt and, if you wish, a clove of crushed garlic .
- Operate the mixer and blend by adjusting the speed and duration according to the desired result, which can be smoother or more rustic.
- You can add 2-3 ice cubes as needed to achieve a more smooth consistency
For garnish :
Ground sumac or paprika, chopped fresh parsley,extra virgin olive oil even a boiled egg or tomatoes as per my video below :
Hummus with beetroot

For the hummus with beetroot variant you need to add 200 g of baked beetroot and a tablespoon of yogurt .
Hummus with lemon basil

For the hummus variant with lemon basil, it is necessary to add 50 gr of lemon basil or classic basil in the last step and mix only for a few seconds.
